AVOCADO BUTTERCREAM FROSTING

File this under crazy things that still work. Are you scared? Are you intrigued? Do you like avocado? Are you open to eating it this way? It is the hearty sweetness of a perfect buttercream with something cool and foodie like chocolate and avocado. Not only can you try this, I think you want to try this. Top it off with a blackberry too. BECAUSE IT IS SUMMER. Blackberry and avocado thing should be happening. Also, chocolate still.

AVOCADO BUTTERCREAM FROSTING
Makes about 2 cups

1 cup avocado
1 cup butter, softened
1 and 1/2 cups powdered sugar
2 tablespoons milk
1/4 teaspoon salt

Beat butter in an electric mixer for 2 minutes at medium speed. Add avocado and beat for 1 minute. Slowly incorporate powdered sugar. Mix in milk and salt until incorporated.

    Just made this, I used unsalted butter, one cup previously mashed avocado (mashed a day before for some reason), organic powdered sugar(from Whole Foods), Himalayan salt, and plant based milk. Honestly I’m testing out three avocado buttercream frostings for a birthday cake I’m making. This is the first recipe I have attempted and it came out great! Anyone know how long it will last I never the fridge and any tips on how to get the avocado cream to become stiffer?
