Pecan & Goat Cheese Truffles

Cheese balls win the lifetime award for most disproportionate fanciness to amount of work needed ratio. They are so easy to put together and yet putting out a cool one at a party with just a couple special ingredients has everyone feeling like this is a luxury fair. Goat cheese is my homeboy. These have mint, dried cranberry, and pecans too. And once again, you make these using the same level of effort you need for when you are absent-mindedly making play dough shapes.

PECAN & GOAT CHEESE TRUFFLES
Serves about 8 truffles

8 ounces goat cheese
1/4 cup pecans
1/4 cup dried cranberries
4 mint leaves
Crackers, for serving

Divide goat cheese into 8 even balls. In a food processor, pulse pecans, cranberries, and mint one at a time. Mix pecans, cranberries, and mint together and spread on a plate. Roll goat cheese balls into toppings. Serve with crackers.

Instructions
