CAPRESE TORTELLINI PASTA SALAD

Next bridal or baby shower I am hosting or attending, I am making this. It is quick and only a handful of ingredients, but feels a bit more special than a typical pasta salad you might set out for a party. Or, we sometimes add shredded chicken and have it as a dinner. For a quick note on basil, I have almost completely abandoned ever slicing it. So often my knife bruises or browns the leaves, I have found torn pieces take only a second and make the final dish feel a little pleasantly rustic too.

CAPRESE TORTELLINI PASTA SALAD
Serves 5 to 6

1/2 pound tortellini, cooked
Balsamic dressing
1 pint cherry tomatoes, halved
10 basil leaves, sliced or torn
1 cup mozzarella pearls, or sliced mozzarella
Salt & pepper

Prepare tortellini according to package instructions. Toss cooked tortellini in balsamic dressing. Stir in cherry tomatoes, basil, and mozzarella pearls. Season with salt & pepper.

Instructions
  1. Prepare tortellini according to package instructions.
  2. Toss cooked tortellini in balsamic dressing.
  3. Stir in cherry tomatoes, basil, and mozzarella pearls.
  4. Season with salt & pepper.
