HONEY DIJON ROASTED CARROTS

Carrots are probs the best tasting vegetable just standing alone? Do we agree on this? So yes, you can do some solid carrots with merely olive oil and salt and pepper roasted up. Even though they are good just like that, carrots have the potential for utter greatness because they start very good and with some nice spice and dressing they become the pinnacle of vegetable creation.

Your vegetables can TAKE flavor, people. Give them what they want. Don’t under season or flavor. Except for salt, it’s pretty hard to do too much.

Serves about four

2 pounds carrots (this is about 12), quartered
2 tablespoons honey
2 teaspoons dijon mustard
1 teaspoon olive oil
1 teaspoon balsamic vinegar
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon salt
A dash of red pepper flake
1 tablespoon chives, chopped

Preheat oven to 400 degrees. Whisk together honey, dijon mustard, olive oil, balsamic vinegar, pepper, garlic powder, and salt. Toss carrots in sauce then arrange on a parchment lined baking sheet. Roast for 20 minutes, or until tender. Top with red pepper flake and chives.
