When we used to have a meal plan board (for now I have stopped and gone boring digital), David took over the beloved job of writing our meal plans up on the chalkboard. I was particularly fond of it because of his liberal use of abbreviations. And so here’s the recipe for our “mashed c. flower,” a bit healthier version of mashed potatoes! Still yummy and good and a little lighter. Do not forget lots of fresh chives for this!
Mashed Cauliflower
Serves four
2 heads cauliflower, cut into florets
1 cup shredded cheddar
1/4 cup grated parmesan
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
3 tablespoons chives, chopped
Bring a pot of water to boil. Place cauliflower in boiling water and cook for 8-10 minutes, until largest pieces are very tender.
Transfer cauliflower to a stand mixer and combine with cheddar, parmesan, salt, pepper, and garlic powder until smooth. Top with chives.
