APPLE KIELBASA WITH MINI PUFF PANCAKES

We are big maple syrup lovers. The taste is definitely noticeable and we’re from Michigan so using the real stuff is kind of our thing. But the price is not amazing! Definitely paying for the quality. (Of liquid gold).

Is there a kind of the cheap regular syrup that doesn’t taste terrible?

I will grant I have done aldi brand and kroger brand and maybe there’s better options than those? Are there? Whatever you’ve found, put it on this.

Serves four to five

4 eggs
1 cup flour
1 cup milk
1/4 teaspoon sugar
A dash of salt
2 teaspoon olive oil
12 ounces kielbasa, sliced
1 tablespoon butter
1 onion, diced
1 apple, diced
1/2 teaspoon pepper
Maple syrup

Preheat oven to 400 degrees. Whisk together eggs, flour, milk, sugar, and salt. Divide batter into a greased muffin tin with about 1/4 cup of batter for each muffin. Bake for 25 minutes.

Heat olive oil in a skillet over medium-high heat. Add kielbasa to pan and saute for five minutes, stirring once or twice. Strain excess oil and set kielbasa aside.

Lower pan heat to medium. Melt butter in pan. Add onion and cook for two minutes. Add apple and cook for 2 more minutes. Season with pepper. Stir in kielbasa.

Top mini puff pancakes with kielbasa mixture and maple syrup.
