HOW TO MAKE STIR FRY WITH TOFU!

IMMEDIATELY I want to say that if you are not a “tofu person” (in some ways, we aren’t “tofu people” and yet I like this) you can promptly do this exactly same recipe with chicken (or any meat). And perhaps you should because you ought to get to still partake and be made happy by this peanut ginger sauce.

But, tofu is attainable and my husband is definitely a has-to-have-meat-to-be-a-meal fellow and he was good with this for a meatless monday vibe. Try it once! See if the tofu world is for you!

Serves five to six

3 tablespoons sesame oil, divided
14 ounce extra firm tofu block, sliced into centimeter square pieces
1/3 cup soy sauce
1/3 cup peanut butter
1 tablespoon grated ginger
2 tablespoons rice wine vinegar
1 teaspoon garlic powder
1 tablespoon brown sugar
1/4 teaspoon red pepper flake
3 carrots, diced
1 cup soy beans (edamame)
1 onion, diced
4 green onions
2 tablespoons sesame seeds
White rice

Heat 1 tablespoon sesame oil in a large skillet over medium heat. Pat tofu dry. Add tofu to pan and saute for 8-10 minutes, stirring occasionally.

Prepare sauce by blending soy sauce, peanut butter, ginger, 2 tablespoons sesame oil, rice wine vinegar, garlic powder, brown sugar, and red pepper flake.

Add sauce, carrots, edamame, and onion to tofu and saute for 3-5 more minutes.

Top with green onion and sesame seed and serve with white rice.

    If you toss pressed and dry tofu in cornstarch before pan-frying, it gets really crispy! I’m definitely going to try this recipe.
