ONE PAN LEMON HUMMUS CHICKEN AND SQUASH

We are no stranger to one pan things on the stove top. (Two of our favorites are jambalaya and twenty minute sausage and tortellini.) But now I am getting off the stove top and doing one pan things in the oven with a baking sheet and it is going well most of the time. Hummus and chicken! And squash! Because one pan meals are even better when they include an entree WITH a separate side. I served it with sliced strawberries and from the feedback I got, people were all about the summer meal feel.

One Pan Lemon Hummus Chicken and Squashes
Serves four

3 yellow squash, sliced
3 zucchinis, sliced
1 onion, sliced
2 tablespoons olive oil, divided
1/4 teaspoon pepper
1/4 teaspoon salt
1 cup hummus
2 lemons, juiced
1/2 teaspoon paprika
Fresh parsley

Preheat oven to 450 degrees.

Toss yellow squash, zucchini and onion in 1 tablespoon olive oil and spread into a single layer on a lined baking sheet. Season with salt and pepper.

Whisk together hummus  with 1 tablespoon olive oil and lemon juice. Coat chicken breasts in hummus and place on baking sheet next to vegetables. Season chicken with paprika

Roast for 35 minutes. Top with fresh parsley.
