Yes, stir fry is one of my favorite things to do in the crock pot. Because you can prep your starch (rice noodles or straight rice) really easily and then if everything else is taken care of in the slow cooker, your meal is like, immediately done. Such is the case here, with this garlic pork stir fry. To do a stir fry with pork is so easy this way because just in general I like to work with pork in the slow cooker. Flavor is great and it goes quickly.
Slow Cooker Garlic Pork Stir Fry
Serves five to six
2 pork tenderloins
8 cloves garlic, minced
1/2 cup soy sauce
1/2 cup brown sugar
1/2 cup lime juice
1 tablespoon sesame oil
1 tablespoon rice wine vinegar
1 tablespoon grated ginger
1 teaspoon pepper
Place tenderloins in slow cooker with garlic, soy sauce, brown sugar, lime juice, sesame oil, rice wine vinegar, ginger, and pepper.
Cook on low for 6-7 hours or high for 3-4 hours. Remove pork and shred. Return to slow cooker and cook for 30 more minutes.
Prepare rice noodles according to package instructions. Serve pork over noodles, topped with green onion, chopped cashews, and cilantro.
