CHIPOTLE POPCORN CHICKEN

- 3 boneless, skinless chicken breasts, cubed
- ½ cup chipotle peppers in adobo sauce, chopped
- 1 cup milk
- 1 egg
- 2 tablespoons corn starch
- 1 cup panko
- Vegetable oil
- Salt & pepper
- Whisk together milk, egg, corn starch, chipotle peppers in adobo sauce, and salt & pepper.
- Marinate chicken in mixture for 2-3 hours.
- Remove chicken from mixture and coat in panko.
- Heat a pan over medium with oil.
- Fry chicken in pan for 3-5 minutes on each side.
