PULLED PORK STUFFED SWEET POTATOES

Ingredients
  • 2 pounds porkloin
  • ¼ cup chili powder
  • 1 tablespoon paprika
  • 2 cloves garlic, minced
  • 6 cups coke
  • 1 cup BBQ sauce
  • 4 sweet potatoes
  • ¾ cup pecans, crushed
  • Salt & pepper
Instructions
  1. Place porkloin, chili powder, paprika, garlic, and coke into a crockpot. Season with salt & pepper.
  2. Cook on high for 3-4 hours or low for 7-8 hours.
  3. About an hour and a half before cook time is complete, preheat oven to 400 degrees.
  4. Wrap sweet potatoes individually in foil and bake for 1 hour.
  5. Drain liquid from crockpot and shred pork.
  6. Top with BBQ sauce and crushed pecans and serve in sweet potatoes.
