ROASTED LENTILS WITH BELL PEPPERS

Ingredients
  • 1 cup lentils
  • 1 sweet onion, diced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 teaspoon garlic powder
  • 1 bay leaf
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon basil
  • 1 cup crushed tomatoes
  • 1 green pepper, diced
  • 1 orange pepper, diced
  • ¾ cup feta
Instructions
  1. Preheat oven to 375 degrees.
  2. Stir together all ingredients, except feta, in a 3 quart baking dish.
  3. Bake for 45 minutes.
  4. Top with feta.
