SLOW COOKER CHICKEN & WILD RICE SOUP

Ingredients
  • 3 boneless, skinless chicken breasts
  • 1 cup wild rice
  • 4 carrots, chopped
  • 1 onion, diced
  • 2 celery stalks, chopped
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon fresh parsley or 1 teaspoon dried
  • 6 cups vegetable broth
Instructions
  1. Place all ingredients in slow cooker.
  2. Cook on low for 7-8 hours or high for 5-6 hours.
  3. Shred chicken with forks.
