CHEESY STUFFED MEATBALL SLIDERS

Serves: 3-4
- 1 and ½ pounds ground beef
- 1 egg
- 2 tablespoons olive oil
- 8 ounces mozzarella, shredded
- 4 garlic cloves, minced
- 1 tablespoon basil
- 1 tablespoon parsley
- ½ cup panko
- ¼ cup bacon pieces
- 4 ounces pepper jack cheese, sliced into 12 cubes
- 24 ounces tomato sauce
- 12 slider buns
- Salt & pepper
- Preheat oven to 400 degrees.
- In a large bowl, combine beef, egg, olive oil, 6 ounces mozzarella, garlic, basil, parsley, panko, bacon pieces, and salt & pepper.
- Form meat into 12 meatballs by rolling into a round ball, then flattening to wrap one of the cubed cheeses around it.
- Arrange meatballs in a 9x13 glass baking dish. Pour tomato sauce over meatballs.
- Bake for 30 minutes.
- When 5 minutes remain, sprinkle with remaining mozzarella. Serve on slider buns.
