BLACK BEAN PICO DE GALLO
- 15 ounces black beans
- 3 ears of corn, sliced (or 15 ounces canned)
- 15 cherry tomatoes, halved
- ½ red onion, minced
- ¼ cup cilantro
- 2 avocados, cubed
- 2 jalapeƱos, diced (optional)
- 2 tablespoons red wine vinegar
- 2 limes, juiced (about 4 tablespoons)
- 2 teaspoons honey
- ¼ cup olive oil
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- Combine black beans, corn, tomatoes, red onion, cilantro, avocado, and jalapeƱo (if using).
- In a separate bowl, stir together red wine vinegar, lime juice, honey, olive oil, garlic powder, salt, and pepper. Toss pico in dressing.
