BLACK BEAN PICO DE GALLO

Ingredients
  • 15 ounces black beans
  • 3 ears of corn, sliced (or 15 ounces canned)
  • 15 cherry tomatoes, halved
  • ½ red onion, minced
  • ¼ cup cilantro
  • 2 avocados, cubed
  • 2 jalapeƱos, diced (optional)
  • 2 tablespoons red wine vinegar
  • 2 limes, juiced (about 4 tablespoons)
  • 2 teaspoons honey
  • ¼ cup olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
Instructions
  1. Combine black beans, corn, tomatoes, red onion, cilantro, avocado, and jalapeƱo (if using).
  2. In a separate bowl, stir together red wine vinegar, lime juice, honey, olive oil, garlic powder, salt, and pepper. Toss pico in dressing.
