SWEET POTATO SALAD

Ingredients
  • 4 sweet potatoes, peeled and cubed
  • 4 tablespoons olive oil, divided
  • ½ teaspoon salt, divided
  • ¾ teaspoon pepper, divided
  • 30 ounces chickpeas
  • 15 ounces black beans
  • ½ cup red onion, diced
  • ¼ cup lemon juice
  • 1 teaspoon garlic powder
  • ¼ cup chopped parsley
  • ¼ teaspoon red pepper flake
  • 3 tablespoons sesame seeds
Instructions
  1. Preheat oven to 400 degrees.
  2. Drizzle sweet potato with 1 tablespoon olive oil and season with ¼ teaspoon salt and ¼ teaspoon pepper. Arrange on a lined baking sheet and roast 30 minutes.
  3. Toss together roasted sweet potatoes with chickpeas, black beans, red onion, lemon juice, garlic powder, parsley, ¼ teaspoon salt, ½ teaspoon pepper, red pepper flake, and sesame seeds.
