CRANBERRY WILD RICE SALAD

Ingredients
  • 1 and ¼ cup wild rice
  • 4 chicken breasts, cooked and shredded
  • ½ cup dried cranberries
  • ½ cup golden raisins
  • 4 green onions, sliced
  • ¼ cup pine nuts
  • 3 tablespoons parsley, chopped
  • ¼ cup orange juice
  • 2 tablespoons apple cider vinegar
  • ¼ cup olive oil
  • Salt & pepper
Instructions
  1. Prepare wild rice according to package instructions.
  2. Whisk orange juice, apple cider vinegar, olive oil, and salt & pepper.
  3. In a separate bowl, stir together shredded chicken, wild rice, dried cranberries, raisins, green onion, pine nuts, and parsley.
  4. Toss with dressing.
