LOADED GOAT CHEESE BAKED SWEET POTATOES
- 4 sweet potatoes
- 1 onion, sliced
- 2 cups chopped kale
- 2 tablespoons olive oil
- A dash of nutmeg
- A dash of red pepper flake
- ¾ pound bacon, cooked and crumbled
- ¼ cup dried cherries
- 4 ounces goat cheese, crumbled
- ¼ cup parmesan, grated
- Preheat oven to 425 degrees.
- Arrange sweet potatoes on a lined baking sheet and roast for 50-55 minutes, until tender throughout.
- In a skillet over medium heat, saute onion and kale in olive oil for 5-7 minutes.
- Season with nutmeg and red pepper flake.
- Slice baked sweet potatoes vertically and stuff with kale, bacon, dried cherries, goat cheese, and parmesan.
