BETTER-THAN-TAKEOUT CHICKEN LETTUCE WRAPS

Ingredients
  • 2 tablespoons sesame oil
  • 2 pounds ground chicken breast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • ⅓ cup soy sauce
  • 3 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sriracha
  • 8 ounces water chestnuts, diced
  • 1 bell pepper, diced
  • 4 green onions, sliced
  • 1 tablespoon sesame seeds
  • Bibb or butter lettuce leaves
Instructions
  1. In a large skillet over medium heat, cook ground chicken in sesame oil for 7 minutes. Strain liquid from skillet and add an additional drizzle of sesame oil.
  2. Add onion to pan and cook for 5 minutes.
  3. In a bowl, whisk together soy sauce, rice vinegar, honey, and sriracha.
  4. Pour sauce over chicken and add garlic, water chestnuts, and bell pepper to pan. Cook for 2-3 more minutes.
  5. Serve in lettuce leaves and top with green onion and sesame seeds.
