BLUEBERRY LEMON POUND CAKE LOAF

Ingredients
  • 3 cups flour
  • 1 teaspoon salt
  • 2 teaspoon baking powder
  • 1 cup sugar
  • ½ cup brown sugar
  • 1 and ½ cups milk
  • 1 cup coconut oil (vegetable works too!)
  • 4 eggs
  • ¼ cup lemon juice
  • 2 teaspoon vanilla extract
  • 2 cups blueberries
Instructions
  1. Preheat oven to 350 degrees.
  2. In a stand mixer, stir together flour, salt, baking powder, sugar, and brown sugar. Add in milk, oil, eggs, lemon juice, and vanilla. Mix until a smooth batter forms.
  3. Fold in blueberries.
  4. Transfer to greased 9x5 loaf pans.
  5. Bake for 60-70 minutes.
