Bring rice and water to boil over high heat. Reduce heat to low and simmer for 20 minutes. Or, prepare in a rice cooker.
Whisk together honey and soy sauce. Toss rice in soy sauce mixture.
Heat butter in a skillet over medium heat. Saute kale and carrot for 2-3 minutes. Add green onion, edamame, and garlic. Cook for 2 more minutes. Add rice to vegetables.
Serve with bacon, fried eggs, mashed avocado, jalapeƱo, cucumbers, red pepper flake, and black pepper.
