HONEY DIJON ROASTED CARROTS

Ingredients
  • 2 pounds carrots (this is about 12), quartered
  • 2 tablespoons honey
  • 2 teaspoons dijon mustard
  • 1 teaspoon olive oil
  • 1 teaspoon balsamic vinegar
  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • A dash of red pepper flake
  • 1 tablespoon chives, chopped
Instructions
  1. Preheat oven to 400 degrees.
  2. Whisk together honey, dijon mustard, olive oil, balsamic vinegar, pepper, garlic powder, and salt.
  3. Toss carrots in sauce then arrange on a parchment lined baking sheet.
  4. Roast for 20 minutes, or until tender.
  5. Top with red pepper flake and chives.
