APPLE KIELBASA WITH MINI PUFF PANCAKES

Ingredients
  • 4 eggs
  • 1 cup flour
  • 1 cup milk
  • ¼ teaspoon sugar
  • A dash of salt
  • 2 teaspoon olive oil
  • 12 ounces kielbasa, sliced
  • 1 tablespoon butter
  • 1 onion, diced
  • 1 apple, diced
  • ½ teaspoon pepper
  • Maple syrup
Instructions
  1. Preheat oven to 400 degrees. Whisk together eggs, flour, milk, sugar, and salt. Divide batter into a greased muffin tin with about ¼ cup of batter for each muffin. Bake for 25 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Add kielbasa to pan and saute for five minutes, stirring once or twice. Strain excess oil and set kielbasa aside.
  3. Lower pan heat to medium. Melt butter in pan. Add onion and cook for two minutes. Add apple and cook for 2 more minutes. Season with pepper. Stir in kielbasa.
  4. Top mini puff pancakes with kielbasa mixture and maple syrup.
