Place oats, apples, water, milk, maple syrup, vanilla, lemon juice, and salt in the slow cooker. Cook on high for 2-4 hours or low for 4-6 hours, stirring hourly.
Top with additional fresh apples, granulated sugar, cinnamon, and pecans.
