Combine ground chicken with bell pepper, green onions, jalapeño, mango, coconut, parsley, salt, pepper, and egg in a large bowl. Form meat into burger patties.
Grill burgers on medium-high heat for 4-5 minutes on each side. Serve on buns with sliced mango, sliced peppers, and lettuce.
