SUN DRIED TOMATO BASIL MEATLOAF

Ingredients
  • 1 and ½ pounds ground turkey
  • 3 eggs
  • 1 yellow onion, diced
  • 6 cloves garlic, minced
  • 3 cups panko
  • 1 cup parsley, chopped
  • 4 ounces mozzarella, sliced
  • Sun dried tomatoes
  • ⅓ cup basil
  • Salt & pepper
Instructions
  1. Preheat oven to 400 degrees. Combine turkey, eggs, onion, garlic, panko, and parsley in a large mixing bowl.
  2. Spread onto a sheet of parchment paper and form a large rectangle, about 10x15 inches.
  3. Place sun dried tomatoes, mozzarella, and basil across meat. Shape meat into a roll and place in a greased 9x13 glass baking dish. Season with salt & pepper.
  4. Bake 60 minutes.
