Preheat oven to 400 degrees. Combine turkey, eggs, onion, garlic, panko, and parsley in a large mixing bowl.
Spread onto a sheet of parchment paper and form a large rectangle, about 10x15 inches.
Place sun dried tomatoes, mozzarella, and basil across meat. Shape meat into a roll and place in a greased 9x13 glass baking dish. Season with salt & pepper.
Bake 60 minutes.
