ONE PAN LEMON HUMMUS CHICKEN AND SQUASHES

Ingredients
  • 3 yellow squash, sliced
  • 3 zucchinis, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil, divided
  • ¼ teaspoon pepper
  • ¼ teaspoon salt
  • 1 cup hummus
  • 2 lemons, juiced
  • ½ teaspoon paprika
  • Fresh parsley
Instructions
  1. Preheat oven to 450 degrees.
  2. Toss yellow squash, zucchini and onion in 1 tablespoon olive oil and spread into a single layer on a lined baking sheet. Season with salt and pepper.
  3. Whisk together hummus  with 1 tablespoon olive oil and lemon juice. Coat chicken breasts in hummus and place on baking sheet next to vegetables. Season chicken with paprika
  4. Roast for 35 minutes. Top with fresh parsley.
