½ cup crushed pineapple, plus additional for serving
½ cup brown sugar
1 egg
1 teaspoon vanilla
1 cup milk
1 and ½ cups flour
1 and ½ teaspoons baking powder
1 teaspoon cinnamon
Butter
Vanilla yogurt
1 cup chopped pecans
Maple syrup
Instructions
In a stand mixer, mash bananas. Add pineapple, brown sugar, egg, vanilla, and milk and mix. Add flour, baking powder, and cinnamon and continue to mix until an even batter forms.
Lightly coat a large skillet with butter and heat over medium-low heat. Pour in ¼ cup batter.
Flip when bubbles appear. Cook opposite side until slightly golden. Repeat with remaining batter, coating skillet again with butter after each batch.
Layer pancakes with vanilla yogurt. Top with pecans, additional pineapple, banana, and maple syrup.
