SPINACH & RED PEAR CHICKEN QUESADILLA

Ingredients
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 onion, sliced
  • Butter
  • 6 whole wheat tortillas
  • 4 cups shredded mozzarella
  • 1 cup spinach
  • 1 red pear, sliced
Instructions
  1. Preheat oven to 450 degrees. Arrange chicken in a 9x13, foil-lined baking dish. Drizzle chicken with olive oil and season with salt and pepper. Roast for 45 minutes. Shred chicken.
  2. Saute onion in a skillet over medium heat with a small drizzle of additional olive oil until very tender, about 7 minutes. Lightly coat a skillet with butter and lay a tortilla in pan over medium heat and sprinkle about ⅔ cup of mozzarella. Allow to melt for 1-2 minutes. On half of the tortilla, layer on spinach, chicken, onions, and red pear.
  3. Fold tortilla in half and press until melted cheese holds quesadilla closed. Slice quesadilla into triangles.
