LEMON BUTTER VEGETABLE TORTELLINI

Ingredients
  • 1 pound cheese tortellini
  • 1 broccoli crown, chopped
  • 4 tablespoons butter
  • 1 cup spinach
  • 1 red pepper, chopped
  • 1 lemon, juiced and zest
  • ½ teaspoon salt
  • ½ teaspoon pepper
Instructions
  1. Prepare tortellini according to package instructions.
  2. Meanwhile, melt butter over medium heat in a large skillet for 1-2 minutes.
  3. Add red pepper and broccoli. Cook for 2-3 minutes.
  4. Add tortellini, lemon zest, lemon juice, spinach, salt, and pepper. Stir over heat until spinach is wilted.
