MEXICAN PORK ROAST WITH BLACK BEAN SALAD

Ingredients
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon pepper
  • ¾ teaspoon salt, divided
  • ¼ teaspoon red pepper flake
  • 1 and ½ pound pork roast
  • 4 tablespoons olive oil, divided
  • 30 ounces black beans
  • 1 avocado, cubed
  • ½ cup cilantro
  • 6 green onions, sliced
  • 2 tablespoons lime juice
Instructions
  1. Heat oven to 375 degrees. In a small bowl, stir together chili powder, paprika, garlic powder, pepper, ½ teaspoon salt, and red pepper flake. Drizzle pork roast with 1 tablespoon olive oil. Rub seasoning onto roast.
  2. Roast for 50-60 minutes, until internal temperature reaches 160 degrees.
  3. Stir together black beans, avocado, cilantro, scallions, lime juice, 3 tablespoons olive oil, and ¼ teaspoon salt. Serve salad with roast.
