1 pound ziti, cooked al dente with ¼ cup pasta water reserved
3 ounces goat cheese, crumbled
¼ cup Parmesan, grated
Instructions
Melt 3 tablespoons butter in a large skillet over medium heat. Add onion and sugar to pan and cook for about 20 minutes, until browned and caramelized. Season with salt.
Meanwhile, begin boiling a large pot of water.
Once onions are caramelized, remove from pan and set aside. In the same skillet, melt remaining 2 tablespoons of butter. Add mushrooms and parsley and cook for 6 minutes.
Toss ziti in a large bowl with onions, mushrooms, goat cheese, and pasta water. Top with parmesan.
