GOAT CHEESE & BABY BELLA ZITI

Ingredients
  • 5 tablespoons butter, divided
  • 1 onion, sliced
  • ½ teaspoon sugar
  • ¼ teaspoon salt
  • 5 baby bella mushrooms, sliced
  • 4 tablespoons olive oil
  • 3 tablespoons parsley, chopped
  • 1 pound ziti, cooked al dente with ¼ cup pasta water reserved
  • 3 ounces goat cheese, crumbled
  • ¼ cup Parmesan, grated
Instructions
  1. Melt 3 tablespoons butter in a large skillet over medium heat. Add onion and sugar to pan and cook for about 20 minutes, until browned and caramelized. Season with salt.
  2. Meanwhile, begin boiling a large pot of water.
  3. Once onions are caramelized, remove from pan and set aside. In the same skillet, melt remaining 2 tablespoons of butter. Add mushrooms and parsley and cook for 6 minutes.
  4. Toss ziti in a large bowl with onions, mushrooms, goat cheese, and pasta water. Top with parmesan.
