ginger & cilantro hummus

Serves: 3-4
- 15 ounces chickpeas
- ½ cup tahini
- 1 tablespoon garlic
- 1 tablespoon ginger, grated
- ¼ cup cilantro
- 1 lemon, juiced
- ¼ cup water
- ¼ cup olive oil
- A dash of salt
- Rinse and drain chickpeas. Pulse in a food processor until large chunks form. Add tahini, garlic, ginger, cilantro, salt, and lemon juice.
- Process for an additional 1-2 minutes, streaming oil and water into mixture.
- Top with cilantro and serve with pita chips.
