ginger & cilantro hummus

Ingredients
  • 15 ounces chickpeas
  • ½ cup tahini
  • 1 tablespoon garlic
  • 1 tablespoon ginger, grated
  • ¼ cup cilantro
  • 1 lemon, juiced
  • ¼ cup water
  • ¼ cup olive oil
  • A dash of salt
Instructions
  1. Rinse and drain chickpeas. Pulse in a food processor until large chunks form. Add tahini, garlic, ginger, cilantro, salt, and lemon juice.
  2. Process for an additional 1-2 minutes, streaming oil and water into mixture.
  3. Top with cilantro and serve with pita chips.
