chicken & asparagus mozzarella casserole
Serves: 7-8
  • 1 pound pasta
  • 1 pound asparagus, cut into 2″ pieces
  • 2 boneless, skinless chicken breasts, cooked and cubed
  • ½ yellow onion, chopped
  • 1 tablespoon oregano
  • 2 cups mozzarella cheese, shredded
  • ¾ cup panko bread crumbs
  • ¼ cup olive oil
  • Salt & pepper
  1. Prepare pasta according to package instructions. Saute asparagus in a skillet over medium heat for 3-4 minutes. Layer asparagus in the base of 9x13 baking dish. Combine cubed chicken, onion, oregano, and salt & pepper in the same skillet. Cook until onion is tender. Layer chicken and onion on top of asparagus. Top with pasta. Sprinkle mozzarella over noodles, followed by panko. Drizzle entire dish with olive oil. Broil on high for 3-5 minutes, until cheese is melted and bread crumbs are browned.
