EASY COCONUT & HONEY ENERGY BITES

Ingredients
  • 2 cups old-fashioned oats
  • 1 and ½ cups sweetened coconut flakes
  • ½ cup honey (I use aunt sue's raw & unfiltered honey)
  • ⅔ cup peanut butter
  • ¼ teaspoon salt
  • 1 cup chocolate chips (optional)
Instructions
  1. Pulse oats and coconut in a blender for about 20 seconds, until coarsely chopped. Add honey, peanut butter, and salt to blender and mix for about 20 more seconds. Chill dough in freezer for 10 minutes.
  2. Roll dough into 1 and ½ inch balls.
  3. To dip in chocolate, microwave chocolate chips on 50% power for 2 minutes, stirring every 30 seconds. Dip balls into chocolate and place on a lined baking sheet or cutting board. Chill in fridge until chocolate is firm.
