apricot & walnut granola bars

Ingredients
  • 3 cups old fashioned oats
  • 1 cup oat flour
  • 1 cup brown sugar
  • 4 tablespoons flaxseed
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups coconut
  • 1 and ½ cups dried apricots, chopped
  • 1 cup walnuts
  • 1 cup sunflower seeds
  • ½ cup honey
  • 4 tablespoons maple syrup
  • ½ cup butter, melted
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 350 degrees.
  2. Stir together oats, oat flour, brown sugar, flax seed, salt, cinnamon, coconut, apricots, walnuts, and sunflower seeds in a large bowl.
  3. In a separate bowl, whisk together honey, maple syrup, butter, and vanilla.
  4. Transfer dry ingredients into a greased 9x13 baking dish.
  5. Pour honey mixture over dry ingredients and press into an even layer.
  6. Bake for 30-35 minutes. Allow to cool before slicing.
