apricot & walnut granola bars

Serves: 7-8
- 3 cups old fashioned oats
- 1 cup oat flour
- 1 cup brown sugar
- 4 tablespoons flaxseed
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 cups coconut
- 1 and ½ cups dried apricots, chopped
- 1 cup walnuts
- 1 cup sunflower seeds
- ½ cup honey
- 4 tablespoons maple syrup
- ½ cup butter, melted
- 1 teaspoon vanilla
- Preheat oven to 350 degrees.
- Stir together oats, oat flour, brown sugar, flax seed, salt, cinnamon, coconut, apricots, walnuts, and sunflower seeds in a large bowl.
- In a separate bowl, whisk together honey, maple syrup, butter, and vanilla.
- Transfer dry ingredients into a greased 9x13 baking dish.
- Pour honey mixture over dry ingredients and press into an even layer.
- Bake for 30-35 minutes. Allow to cool before slicing.
