asparagus & goat cheese egg bake

Ingredients
  • 10 eggs
  • 1 tablespoon olive oil
  • 3 shallots, chopped
  • 6 asparagus spears, sliced
  • 2 cups cheddar, shredded
  • 2 tablespoons milk
  • 1 tablespoon thyme
  • 1 tablespoon parsley
  • Goat cheese crumbles
  • Salt & pepper
Instructions
  1. Preheat oven to 375 degrees.
  2. Heat olive oil in a skillet over medium heat. Cook asparagus and shallot in pan for 2-3 minutes, until onions are tender. Season with salt & pepper.
  3. Meanwhile, whisk together eggs and milk in a large bowl.
  4. When finished cooking, allow asparagus and onion to cool. Stir cheese, asparagus, and onion into egg mixture.
  5. Transfer everything to a greased 9x13 baking dish. Season with thyme, parsley, and salt & pepper.
  6. Bake for 30-35 minutes.
  7. Note: This dish can be made up to one day ahead. Cool, cover and refrigerate. To reheat, uncover and place in a 350 degrees oven for 15 minutes. Top with goat cheese & serve.
