root beer pork taco salads

Ingredients
  • 2 pounds pork loin
  • 2 cups root beer
  • 1 cup tomato sauce
  • 3 cloves garlic, minced
  • 2 heads lettuce, chopped
  • 2 cups cheddar cheese, shredded
  • 15 ounces black beans
  • 1 red onion, chopped
  • Tortilla chips
  • Salt & pepper
Instructions
  1. Place pork loin in slow cooker with 1 cup water.
  2. Cook on low for 3-4 hours. Remove pork loin from pot and discard water.
  3. Shred pork with two forks and return to crock pot. Season with salt & pepper.
  4. Add root beer, tomato sauce, and garlic and stir.
  5. Cook on low for 1 hour.
  6. Remove pork shreds and assemble taco salad with tortilla chips, lettuce, cheddar, beans, and red onion.
