NOODLE-FREE PAD THAI

- 5 carrots, peeled in ribbons
- 1 zucchini, peeled in ribbons
- 2 chicken breasts, cooked and cubed
- 3 scallions, sliced
- 1 egg, scrambled
- 1 batch of this awesome pad thai sauce
- Cilantro
- Peanuts
- Arrange zucchini and carrot ribbons on a plate like noodles.
- Top with chicken, scrambled egg, peanuts, and pad thai sauce.
- Garnish with cilantro & lime wedges.
