PEANUT BUTTER & PECAN COOKIE SANDWICHES

Ingredients
  • ½ cup butter, grated
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 and ¼ cup oats
  • 1 cup flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 24 pecan halves
  • 3 tablespoons butter
  • ½ cup peanut butter
  • 1 cup powdered sugar
  • 2 tablespoons milk
Instructions
  1. Preheat the oven to 350 degrees.
  2. Cream together ½ cup butter, brown sugar, egg, and vanilla. Incorporate oats, flour, baking powder, baking soda, salt, cinnamon, and nutmeg until a dough forms.
  3. Arrange dough in one inch balls on a lined baking sheet.
  4. Place pecan half on top of dough ball. Bake for 10-12 minutes.
  5. Meanwhile, cream together 3 tablespoons butter, peanut butter, powdered sugar, and milk.
  6. Allow cookies to cool completely.
  7. Spread peanut butter filling across cookies and form sandwiches.
  8. Wrap individually in plastic wrap and store refrigerated for up to 5 days.
