This was one of my first journeys into making granola at home. Do people love doing this? What are the best granola homemade recipes that you go back to time and again? COCONUT & CRANBERRY PECAN GRANOLA
Serves 3-4
2 cups old fashioned oats
2 cups pecans
1/3 cup olive oil
1/3 cup maple syrup
1 teaspoon vanilla
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon salt
1/4 cup dried cranberries
1/2 cup coconut
Preheat oven to 350 degrees. Combine oats, pecans, olive oil, maple syrup, vanilla, nutmeg, cinnamon, and salt into a large bowl. Mix well.
Transfer mix to a line baking sheet and spread into an even layer. Bake for 20 minutes, stirring halfway through. Remove from oven and add cranberries to mixture. Return to oven for 5 more minutes.
Remove and add shredded coconut, baking for a final 5 minutes (that’s 30 minutes baking in total).
