Avocado. Typically, if a pasta sauce is extra tasty, I also expect it to be extra not-so-good for me. AVOCADO PESTO PASTA
Serves 3-4
1 pound pasta, cooked al dente
2 cups my favorite pesto
1 avocado
3 chicken breasts, cooked & shredded (optional)
Parmesan, grated
While pesto is still in food processor, add avocado and pulse until creamy.
Combine avocado pesto with cooked pasta and chicken. Top with parmesan.
