The afternoon we made these, our whole house smelled a like sushi restaurant. I mean that as a good thing, not like a raw fish thing. The fresh smell of avocado and cucumber is what I speak of. We do not go out to eat often, but when we do, it’s usually sushi. Cause we cannot easily make that at home. (Well, I did once. But it was sort of hard and you need a special mat thing.) So, this is how we make a sort of sushi for fun at home.
AVOCADO CUCUMBER ROLLS WITH CAPERS
Serves 2-3
1 cucumber
1 avocado
2 tablespoons lemon juice
1 tablespoon parsley
1 tablespoon dill
Capers
Salt & pepper
Thinly slice cucumber with a vegetable peeler. Mash together avocado with lemon juice, parsley, dill, and salt and pepper.
Spread avocado mixture onto cucumber slices and roll into wraps. Top with capers and additional salt and pepper.
