The afternoon we made these, our whole house smelled a like sushi restaurant. I mean that as a good thing, not like a raw fish thing. The fresh smell of avo & cucumber. We don’t go out to eat often, but when we do, it’s usually sushi. Cause you can’t make that at home. (Well, I did once. But it was sort of hard and you need a special mat thing.) So, this is how we sort of make sushi (that’s not really sushi) at home.
AVOCADO CUCUMBER ROLLS WITH CAPERS
Serves 2-3
1 cucumber
1 avocado
2 tablespoons lemon juice
1 tablespoon parsley
1 tablespoon dill
Capers
Salt & pepper
Thinly slice cucumber with a vegetable peeler. Mash together avocado with lemon juice, parsley, dill, and salt and pepper.
Spread avocado mixture onto cucumber slices and roll into wraps. Top with capers and additional salt and pepper.
