SIMPLE KOREAN BEEF

Sometimes for me to buy a specialty ingredient, it might have to have popped up in at least three or four recipes I have wanted to try. Sesame oil is one such product that back as a newlywed I may have been skeptical to splurge on, but I am so pleased I did. For giving dishes an edge that makes it feel more restaurant-quality, it is what you want! I used it in this korean beef, but we also use it in some of our other regulars like better than takeout chicken fried rice.

This recipe is just a good, inexpensive weeknight dinner. It is a reader favorite!

SIMPLE KOREAN BEEF
Serves six

1 pound ground beef
1/4 cup soy sauce
3 tablespoons honey
1 tablespoon sesame oil
1 tablespoon lime juice
1 teaspoon garlic powder
6 green onions, sliced diagonally
2 cucumber, diced
2 carrots, shredded
Red pepper flake (optional)
Sesame seeds
White rice

Brown ground beef in a skillet over medium heat. In a bowl, whisk together soy sauce, honey, sesame oil, lime juice, and garlic powder.

Mix sauce into ground beef.

Serve with white rice, green onions, cucumber, carrots, red pepper flake (optional), and sesame seeds.

A QUIZZING CRAFT FOR LEARNING THE TEN COMMANDMENTS

I will say right at the top, this little instrument made out of popsicle sticks is good for many things children might be quizzing themselves on as they work to memorize. Books of the Bible, names of the twelve disciples, fruits of the spirit, catechism questions, and tribes of Israel are a few more ideas. Here, they are shown with the ten commandments! The accordion concept with popsicle sticks makes it so children can gradually reveal, and test themselves on the next item.

It is sort of like flashcards but without the quiet chaos of keeping track of the cards, especially as children practice throughout their day around the house in different places.

Also I think the accordion part is liked by children a bit more than simple flashcards!

MATERIALS

  1. popsicle sticks
  2. masking tape
  3. scissors
  4. paints
  5. paintbrushes
  6. marker

INSTRUCTIONS

  1. Count out twenty (for ten commandments version) popsicle sticks and tape together to make ten popsicle stick “couplets.”
  2. Tape all couplets together on opposite side of first piece of tape. This should make a single chain of popsicle sticks that can be folded into an accordion. When it’s correct, each side has tape on only every other seam.
  3. Paint popsicle sticks. I like to do a different color for each couplet, or commandment. (Colors associated with different pieces of information helps with memory.)
  4. Paint reverse side once first side is dried, if desired.
  5. Write out ten commandments on to popsicle sticks. On the top flap when it is in the closed accordion, we like to write the title of this quizzing set. So here, we would write “The Ten Commandments: Exodus 20.” Youngest children may need it written for them, slightly older can trace a pencil writing, and older children can write on their own in print or cursive.

This was a fun and useful project we loved making together. Everyone’s goal was to have them memorized by easter sunday!

ROASTED SPICED CARROTS

Since I always keep carrots in the fridge, when a meal needs another “thing” to it, it is often roasted carrots! Or, when we need to intake a vegetable at some point today, it is often roasted carrots added to the dinner! I really like this recipe because even if your meat or other side are very plain and basic, the spice of these carrots bring something more rich to round out the meal. I think of them often and then want some. This recipe has become a staple.

Also that the things needed are still all pantry items! That makes them made even more regularly. Carrots can handle a good amount of seasoning; give it to them!

I think my favorite way to cook carrots is by roasting. But you could use this recipe for a saute too.

ROASTED SPICED CARROTS
Serves six

10 carrots, peeled and sliced diagonally
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon chile powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cinnamon

Preheat oven to 400 degrees.

Toss carrots in olive oil, garlic powder, chile powder, paprika, salt, pepper, and cinnamon.

Arrange carrots on a lined baking sheet.

Roast for 20 minutes.
