CHICKEN FLORENTINE FLATBREAD

There is a high demand in our house for dinners with the ease and convenience of my typical weeknight rotations, but that can add something totally fresh. I can (and do) buy frozen pizzas when we are in a pinch, but I strive to create similar-but-different (and better tasting!) alternates. Without a doubt, I got way more cheers from the husband for this than ordering this than takeout pizza, and over the years it has become a household classic.

CHICKEN FLORENTINE FLATBREAD
Serves 2

2 flatbread or naan (homemade or store bought)
2 tablespoons butter
1 boneless, skinless chicken breast, cooked and sliced
1 cup cherry tomatoes, halved
1 cup spinach
1/4 cup parmesan, shredded
1 and 1/2 cups mozzarella, shredded
Basil
Salt & pepper

Preheat oven to 400 degrees. Spread butter over naan. Sprinkle half of 3/4 of mozzarella onto bread. Layer spinach on top of mozzarella. Add cherry tomatoes, chicken, remaining mozzarella, parmesan, and basil.

Top with salt & pepper. Bake for 8-10 minutes.

BLUEBERRY PANCAKE FRENCH TOAST BAKE

Yielding pancakes for a crowd will have you at the stove for a while. So, sometimes I make and freeze pancakes in advance, then thaw them and pull this breakfast casserole together the day-of. If the name of this recipe has your mind bending, these are pancakes, made like a baked french toast. Did that make sense? If not, you’ll see below! I love the pretty blueberries on top! Have fun with this one.

BLUEBERRY PANCAKE FRENCH TOAST BAKE from Rachel Schultz

BLUEBERRY PANCAKE FRENCH TOAST BAKE
Serves 8-10

2 batches (15 individual) old fashioned pancakes
6 eggs
1 and 1/2 cups milk
1 cup heavy cream
1/2 cup sugar
1 tablespoon vanilla
1/2 cup flour
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup butter, sliced at room temperature
1 cup blueberries
Powdered sugar
Maple syrup

Slice pancakes in half. Arrange in baking dish in to rows with flat side down. Pour blueberries over pancakes. In a bowl, whisk together eggs, milk, heavy cream, sugar, and vanilla. Pour egg mixture over pancakes. Mash together flour, brown sugar, cinnamon, salt, and butter until a crumble forms. Sprinkle over pancakes.

Chill overnight, or for at least two hours. Preheat oven to 350 degrees and return pan to room temperature. Bake for 50-60 minutes. Allow to cool. Serve with powdered sugar & maple syrup.

LEMON & ROSEMARY STOVE TOP SIMMER

This cranberry & cinnamon stove top potpourri had our apartment smelling lovely all winter. With spring cleaning, I also wanted to freshen up our scent around the house. This is similar to the famous scent you smell at williams-sonoma stores! I love setting the tone for another season and help ushering it in with beautiful smells around the home. I also like when it can be with nice ingredients – lemon, rosemary, and vanilla. YES!

2 lemons, sliced
2 sprigs rosemary
1 tablespoon vanilla

Place ingredients into pot and fill with water to about 1 inch below brim and simmer. Mine lasted about 3 days.
