Summer, I am not quitting you yet. This is a corn salad because there is so much going on it. Cucumber, avocado, red onion. But it is certainly not above being a corn salsa. Really you can and should put it in most taco, burrito, enchilada, etc. types of dishes. Therefore I use it in a variety of mexi ways. Not the least of which is simply eating it with tortilla chips. I reach for this pretty much any time we are making something mexi and I want it to feel a little more special!
Sweet Corn Salad with Avocado
Serves about 3 cups
15 ounces corn
1 avocado, diced
1/4 cup red onion, diced
1/4 cup cucumber, diced
1/4 cup cilantro
2 tablespoons olive oil
1 tablespoon apple cider vinegar
2 teaspoons honey
1/4 teaspoon garlic powder
1/4 teaspoon pepper
A dash of salt
Toss all ingredients together!
- 15 ounces corn
- 1 avocado, diced
- ¼ cup red onion, diced
- ¼ cup cucumber, diced
- ¼ cup cilantro
