COCONUT CUSTARD PIE (IN THE BLENDER!)

Some pie crusts can be exceptionally hard. But then there’s this pie. All the ingredients are mixed together in the blender and poured into a pie pan, but when it cooks, it forms its own crust with filling. I like to do it in the blender because it is fast and easy, but you can mix it almost any way you want. This is certainly the easiest pie I have made. The basic recipe has a lovely vanilla coconut flavor, but the topping variations are numerous!

Serves six

2 cups milk
1 cup desiccated coconut
4 eggs
1 teaspoon vanilla
1/2 cup flour
1/2 cup butter
3/4 cup sugar
1/4 teaspoon nutmeg

Preheat oven to 350.

Combine ingredients in a blender until smooth.

Pour into a greased pie pan. Bake for 45 minutes. Top with fruit, chocolate, powdered sugar, or whatever.

    Wow, thank you for this excellent recipe, made it for a friend whom does not like sweets and they asked for a second piece…I am surprised that it is not reviewed more, come on people try this…I will make it again before New Years with gluten free flour for another friend that is celiac

      I used unsweetened. Either would be fine!
