HOMEMADE ENCHILADA SAUCE

The first time I tried enchiladas, I also made a homemade enchilada sauce for them. Henceforth anytime I made enchils again, I tried more recipe variations on the sauce. Believe it or not, I did not know there was such a thing as store bought enchilada sauce. Then, I saw a picture of the most horrible acid orange liquid canned thing I had ever seen. And I think I nearly screamed or at least pulled away from the computer involuntarily.

Here is one place you can use this recipe for a weeknight dinner!

HOMEMADE ENCHILADA SAUCE from Rachel Schultz

HOMEMADE ENCHILADA SAUCE
Serves about 1 and 1/2 cups

1/4 cup tomato paste
1/4 cup wheat flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
2 cups vegetable broth

Combine tomato paste, flour, garlic powder, onion powder, chili powder, vegetable broth, and salt & pepper in skillet over medium heat. Bring sauce to boil, then reduce to simmer for one minute.

    I have a recipe for homemade sauce, it is basically the same as
    Rachael’s however is seasoned only with cumin, cayenne pepper, and salt to taste. 1 T Oil, mix in flour til thick, add 2 cups vegetable broth or chix broth if adding chicken to recipe, 1 tsp. cumin, cayenne and salt to taste. Also may add a little water if too thick.

    I am going to try a little more seasoning as Rachael suggests, but if you don’t have those…

    LOVE This Site!!! Just got on it when I was googling Chix Fried Rice. Wow! I am amazed. It appears you really understand the life of a busy woman. Just got done with your slow cooker teriyaki chicken recipe to put into the fried rice. I am not a good cook (I can bake though). My kids are usually reluctant to try my food, but they tried this and wanted to eat the whole thing! I’ve been surfing this site and love it…thank you so much for sharing your knowledge!
