The first time I tried enchiladas, I also made a homemade enchilada sauce for them. Henceforth anytime I made enchils again, I tried more recipe variations on the sauce. Believe it or not, I did not know there was such a thing as store bought enchilada sauce. Then, I saw a picture of the most horrible acid orange liquid canned thing I had ever seen. And I think I nearly screamed or at least pulled away from the computer involuntarily.
Here is one place you can use this recipe for a weeknight dinner!
HOMEMADE ENCHILADA SAUCE
Serves about 1 and 1/2 cups
1/4 cup tomato paste
1/4 cup wheat flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
2 cups vegetable broth
Combine tomato paste, flour, garlic powder, onion powder, chili powder, vegetable broth, and salt & pepper in skillet over medium heat. Bring sauce to boil, then reduce to simmer for one minute.
