These tacos are it, people. Black beans are great to use for heartiness in meatless meals, especially if your motive is saving cash. They are so downright cheap. I hope to make meatless dinners that are good, not just good for a meatless meal. And I wanted for nothing the two times (in a row) we ate these. It takes a lot for us to do #meatlessmonday, but for these tacos we do. Your only question now is if you should plan them for meatless monday or taco tuesday.

Also the star right here is just this sauce. Don’t do your next tacos without it, whatever they may be.

Black Bean Tacos with Cilantro Lime Sauce

Black Bean Tacos with Cilantro Lime Sauce
Serves eight tacos

30 ounces black beans
1 tablespoon taco seasoning
1/2 cup salsa
1 avocado
1 cup cilantro
1/2 cup lime juice
4 cloves garlic
2 tablespoons olive oil
2 teaspoons honey
1/4 teaspoon salt
8 tortillas
1/2 red onion, diced
1 cup corn
Additional cilantro
Additional salsa

In a stand mixer, mash together black beans, taco seasoning, and salsa on high for 1 minute. (I found the whisk attachment worked best.)

Transfer black bean filling to a skillet over medium heat and cook for 5 minutes.

Combine avocado, cilantro, lime juice, garlic, olive oil, honey, and salt in blender.

Assemble tacos with tortillas, black bean filling, red onion, corn, salsa, cilantro, and the cilantro lime sauce.

    For some crazy reason, your “PRINT” option on your recipes no longer works for me. Bummer! I hate to have to write all your recipes out by hand. Could you please look into this for me???

    We have had some luck by going to Kroger/Horrocks/Merts. If I look through the sale flyers, Kroger often has buy one, get one sales on certain cuts of meat, and if you don’t mind eating one and freezing one, it’s a good way to go. Of course, freezer space is a hot commodity.I got a nice pork butt on sale at Horrocks last week for around $7. It fed the two of us dinner, plus enough leftovers for at least two lunches.

      Yes we are always freezing meat! But then if you also do freezer meals it starts to get pretty packed in there :)
